Kale Superfood Salad with Quinoa and Blueberries
Recipe Type: Salad, Lunch
This Kale Superfood Salad packs a nutritional punch! Quinoa, blueberries, and avocado bring lots of flavor to this healthy make ahead lunch.
For the Salad:
1 cup quinoa
1 large bunch (about 6 cups) kale, tough stems removed
15 ounce can chickpeas, rinsed and drained (optional)
1 cup blueberries
4 ounces goat cheese, crumbled½ cup sliced almonds
1 avocado, peeled, pitted, and chopped
For the Dressing:
¼ cup extra virgin olive oil
¼ cup lemon juice
2 tablespoons honey
1 ½ teaspoons Dijon mustard
¼ teaspoon Kosher salt
a bit of black pepper
Rinse and drain the quinoa. Place quinoa and 2 cups water in a small saucepan and bring to a boil. Cover, reduce heat to a low simmer, and cook for about 15 minutes until water is absorbed. Transfer to a large bowl to cool.
Meanwhile, make the dressing. Whisk together all dressing ingredients in a large salad bowl. Add the kale and, using your hands, toss it with the dressing.
Once the quinoa is cool, add it to the bowl with the kale, along with the chickpeas (if using), blueberries, goat cheese, almonds, and avocado. Toss gently to combine. Serve.
Make Ahead Instructions: Salad will last for 3 days in the refrigerator, making it a great option for make-ahead lunches. Store the almonds and avocado separately, and add them right before serving.

Now I can't even front lol...I know I haven't been on point with my nutrition.
So I am teaming up with some ladies in my group (BECAUSE I KNOW I CAN'T DO IT ALONE👭👭👭) and we are getting back to basics!!!
Yes, we will be doing our workouts, but our focus will be on cleaning up our nutrition!! Because we all know that we can't 'Out Squat' those bad food habits!!

My grandmother always told us to love eachother NOW. Say what you have to say NOW. Life should be lived to the fullest in the present. For this I have no regrets. I have loved this woman with all I have. She lived a beautiful life. And now she is my Angel.
Coming home is literally like taking a step back in time. This home is a time capsule...capturing every scent, every sight, every feeling from my childhood. So grateful that my grandmother and aunt hold on to our memories and protect them for when we return. ❤🙌
