One of my favourites, vegan spicy slaw. Recipe: Serves 4. Cost approx $8($2/serve) - fine slice a quarter red cabbage, a quarter white cabbage, 5 large kale leaves - Finely long cut two carrots - Cube cut one red capsicum - Halve 15 small cherry tomatoes - Fine cut one hot red chilli - Dice one avocado - Grill four vegan burger patties, then dice Add all ingredients together in a large salad bowl, mix in one tablespoon of vegan parmesan and one of roast garlic veganase, mix. Serve and top with a tablespoon of sunflower seeds and siracha hot sauce and cracked pepper. Approximate Nutrition Calories 499 Protein 33g (66%) Calcium 66% Saturated fat 4.4g Cholesterol 0% Vitamin A 547% Zinc 26% Iron 55% . . . . .

Shrimp fajitas 🤗 up close and personal!! 1lb of shrimp they said veined but I had to hit em again to really clean them (ocean caught tho so that's fine with me) clean rinse and set aside... Chop a Lil bit of colorful baby bells (I went with 6) then 1/2 a large yellow onion, 4 large mushrooms, 1 big ol tomato, a handful of fresh cilantro and 1 zucchini... turn your cast iron (cause cast iron is da best!!) on medium heat, Toss in a scoop of butter or coconut oil and then toss in all the veggies... sprinkle them with red chili, cumin, black pepper and a heaping spoon of garlic (diced) reduce heat to low once veggies are almost cooked and then toss in the shrimp... cook until they shrink and turn pink... That's it! Serve with tortillas and beans of choice and I prefer naked coleslaw as my "lettuce" Mmmmmmmmmm
Today's recipe comes from @foodiecrush ! A one pan flavour bombed hot mess that tastes as good as it looks!! This Spanish rice uses mostly ingredients you'll find stocked in your cupboard too which makes it even easier! Freeze these up for lunches 😎😎😎😎 🔊 tip: Do try use skin on bone in chicken, it really does make such a difference!! The flavour profile changed dramatically. If you're looking for the healthy option then go skinless but trust me when I say the flavour is in the bones! Smoothies and in particular green smoothies are something I rarely have so it's felt like a bit of a treat having one this morning. This one was inspired by apple crumble, (yum 😋one of my favourite desserts). I made it by blending 1/4 cup apple sauce, 1 cup almond milk, 1tbsp almond butter, a small handful of baby spinach, a tsp cinnamon and a good pinch of vanilla. I then warmed it up on the stove, so it was a nice warm breakfast. On top is a mix of almond and coconut I baked with a bit of maple syrup and coconut oil for a few mins at 180C. This stuff is AMAZING!! With a delicious smelling proprietary essential oil blend this can make your hair as soft and healthy as it's ever been. Ahhhhh it's so hard to decide which corn on the cob is my favorite! I think I'm leaning towards the Italian, but the Mexican style was so good too. Then it's not to mention that I really liked the Cajun. Basically, I ate 4 ears of corn for dinner (seconds of the Italian) & loved every niblet. Here's a recipe everyone can enjoy: Toasted Oats Granola with roasted coconut and chocolate 2 cups Old Fashion Oats 2 tbsp extra virgin coconut oil 1/2 cup all natural, no salt added peanut butter 1/3 cup raw honey 1/4 tsp baking soda 1 cup dark chocolate chips Dash sea salt 1 cup chopped almonds 1/2 cup raw crushed peanuts 2 tbsp cranberries 1/3 cup shredded coconut shredded 2 tbsp flaxseed 1/4 cup chia seeds Preheat oven at 300F. In a small bowl, add in oats with a pinch of salt and two tbsp olive oil. Mix and place on baking pan then spread evenly. IF you're using any types of nuts, I recommend to roasted them with oats but there's no need to add oil or salt on nuts. Place in oven for about 20 mins or until the oats are golden. In microwaveable bowl, add in peanut butter, coconut oil, and honey microwave for 45 secs then mix well. Add mix to larger bowl then when oats and nuts are cooled add into bowl with other ingredients and mix evenly. In a 8in square baking pan, add lining of parchment paper then add granola mix and spread evenly out on pan. Then add another parchment paper layer on top of granola and use a flat surface item to press down granola. Once evenly pressed remove top parchment and place the pan into the oven for 25-27 mins. Use toothpick to check for readiness. If nothing sticks other than chocolate, the granola is done. Let cool for at least 30 mins (add into freezer for 10 mins for faster cooking), cut bars into small pieces then drizzle chocolate and sprinkle roasted coconut on top of granola. Tasty midday pick me up! Enjoy ♥️

Guess what we've got.... TRUFFLES! Truffles are commonly used as a garnish or to add extra flavour to meals. Truffles are great for vegetarians as they contain a high content of protein. Truffles protein content ranges from 20 to 30 percent for each serving. The protein found in truffles is of a very high quality as they contain all the amino acids necessary for good nutrition. Here is a great way to incorporate truffles into a meal. I've finely grated some truffle and stirred it through some mashed potato... it was delicious 😋 Give a truffle a try this week is you're feeling a bit experimental or if your cooking is lacking some flavour. Sharing these photos is never easy, especially when I know I've fallen off track. As many of you know over the last 3 weeks I committed myself to do what is called "The Ultimate Reset", 21 days of cleansing my body from the inside out. To be honest I was terrified to start. I'll be the first to admit I have a struggling relationship with food. So after a long winter of bad habits this was just the thing I needed to break free of them. And the results are in... ✨I lost a total of 9 pounds, and a lot of belly bloat! ✨I became more mindful of what I put in my body! ✨I learned to really listen to what my body needed! ✨I learned to love what REAL food should taste like! Oh yeah, the others lost 20 pounds (10 inches overall), 13 pounds (3 inches off hips, chest, thighs), and 10 pounds (1 3/4 inches off hips), 11 pounds for one, and 12 pounds for another. We are all feeling pretty proud. The next month will be spent easing back into the real world with this new way of eating and looking at food. It's an amazing experience for anyone ready to carve out healthier eating habits, STOP looking at their body as the enemy, and START loving it from the inside out. I dug up this old but gold recipe - homemade tau huay ie soymilk beancurd pudding if I can somewhat translate it for my non Singaporean/Asian friends here.. . I've been wanting to make this literally from scratch by making my own soy milk but haven't had time to squeeze beans and also, I figured you guys would prefer an easier recipe. The pudding is not as firm as the western versions and is silky smooth and light. I love tau huay and have a few favorites and even enjoy the Lao Ban version every now and then despite it being terribly unhealthy (made with a lot of sugar and creamer). Anyway, if you are craving for this, give this easy recipe a try and I might experiment with a few other flavors too.. . Silky Smooth Tau Huay. . 1.5 C low sugar soy milk (I use nutrisoy) ½ tbspn gelatin powder 1.5 tbspn water.. . 1. Mix gelatin powder and water till the gelatin is fully dissolved.. . 2. Heat up the soy milk in a saucepan, add the gelatin mixture and mix thoroughly.. . 3. Pour the soy milk into an airtight container and chill for approximately 3-4 hours. It is ready when it is semi set and wobbly.. . 4. Serve with soy milk or if you prefer, make a ginger syrup (boil a few slices of ginger on syrup water).
