Q. What has been the most challenging so far?
In the early stages it was trying to make ends meat for the first 18 months. It was a major challenge.
For me particularly it's making the coffee perfect. It's a nightmare. Trying to figure out why the coffee changes throughout the day. We're really curious. It eats me alive. The chemistry behind it is very deep.
