Chrissy - Made this crunchy Raw Pad Thai for lunch with crushed peanuts...soo good! 
Recipe:
1 cup zucchini noodles
1/2 cup carrot noodles
1/4 cup red cabbage (shredded)
1/4 edamame 
1/2 avocado (diced)
1/2 tbsp sesame seeds
1/2 tbsp crunchy shallots
Handful crushed peanuts

Dressing: 
1 lemon (juiced)
2 tbsp sesame oil
2 tbsp apple cider vinegar
2 tbsp tamari
1 tbsp raw honey
1 tbsp sesame seeds
1/2 tbsp chia seeds
1 tbsp crushed peanuts
Pinch salt
